Breakfast for Dinner. This was fun and YUMMY! I have never tried gingerbread pancakes before, but YUM! I even tried to make one pancake look like a gingerbread man
Gingerbread Pancakes (this makes a TON!) I put left overs in mason jars in my fridge and we made more on christmas morning.
3/4 C butter, softened
1 1/2 C. Packed brown Sugar
6 eggs
1 1/2 C molasses ( I learned this is a lot of molasses. I did 1/2 C Molasses and 1 cup Pumpkin pure'
6 C flour
4 1/2 tsp Baking Powder
1Tbs Ground ginger
1 Tbs Ground cinnamon
2 1/4 tsp salt
3/4 tsp Ground allspice
4 C milk ( I added more because it was pretty thick)
In a very large bowl cream butter and brown sugar until fluffy. Add eggs, one at a time. Beat in molasses. Combine flour, baking powder, ginger, cinnamon, salt and all spice; add to the creamed mixture alternately with milk beating well after each addition.
